With the weather getting warmer, I start to crave salads and love a simple recipe that takes less than ten minutes to prepare. It is my go to salad in the summer months. This is an IBS friendly salad, with all the ingredient being low FODMAP and filled with nutritious vegetables.
The cucumber adds crunch and the olives are an excellent hit of healthy fats and micronutrients. If you fancy jazzing it up or making a larger salad, keep the below ingredients as your salad base and mix in extra vegetables such as rocket, lettuce or avocado.
Recipe
Serves 1 – 2
Eat by itself or serve as a tasty side salad
Ingredients
12-15 Cherry Tomatoes
Half a Cucumber
1/3 Cup Olives
5 Fresh Basil Leaves
1tbsp Garlic Oil
Half a Freshly Squeezed Lemon
Salt and Pepper to taste
- Dice the tomatoes, cucumber and olives and place in a large bowl
- Finely chop the basil and mix into the chopped vegetables
- Drizzle over the garlic oil and lemon and mix thoroughly
- Season as you like it
Serve straight away or store in the fridge for two days.
